What is always the easiest thing to do to change a kitchen, is to simply change the cabinet doors and the hardware. You can even get away with not changing, or even PAINTING (yes, you can!) the formica.

Suppose you are changing your scheme to black and white from wood tones. Did you know that most cabinets made way back are actually better made than cabinets nowadays?

You are far better off salvaging them and painting them than buying new. Hiring a painter to paint the base cabinets can be far cheaper than replacing them.
